Gangbyeol Seongsu is a tasting-menu restaurant on the ground and third floors of a red-brick building in a side street off Ttukseom-ro 9-gil in Seongsu-dong. The third floor serves chef Cha Han-byeol's Byeol course and the ground floor chef Kim Hyun-yu's Gang course. Lunch is seven courses for 58,000 won, dinner nine for 98,000, and swapping the main for Hanwoo striploin adds 29,000. Each plate serves two to share, and 26 posts mention the free message written on the dessert, sent the day before. Two posts say the ground floor was run by chef Park Jae-beom before June 2026. What sets it apart
- Nine posts say you can watch the chefs cook from your seat. There is a bar plus a few tables for two or three, and one writer asked for a bar seat specifically to watch. One post counts two tables for two and one large table for about six on the third floor; three posts sat in or saw a private room, including a group of seven.
- No post calls it expensive. Eleven say it is good value for the money, and four note it is not cheap without reaching a verdict. One couple paid 124,000 won for two lunches plus a lemonade; another put dinner with a non-alcoholic pairing in the 120,000 range.

Several posts say the restaurant uses the ground and third floors, with a list at the ground-floor entrance telling each booking which floor to go to. No post mentions a basement.
Two posts say there is no lift and the third floor is reached by stairs; one suggests the ground-floor Gang course if stairs are hard. No one mentions an entrance step or coming in with a wheelchair or stroller — we simply do not know.
Three posts say the toilet is inside the restaurant, and two say it is a single shared stall; one calls it clean.

What we do not know
- Two posts found the food salty — the Gang course vongole and the vegetables with the main — and one asked the kitchen to ease off. One more says the Byeol pasta may taste salty to those who eat lightly seasoned food.
- Three posts walked from Seongsu Station, about ten minutes; five others just say it is a bit far from the station. One suggests the nearby bus stop.
- It is reservation-only and no post describes a wait; one says there was none at 2 p.m. on a Saturday, and two mention a sofa in the third-floor hallway for early arrivals. Bookings go through Naver or CatchTable; one post lists deposits of 30,000 won (CatchTable) or 20,000 won (Naver) per person.
- Eight posts list hours of 12:00–21:30 daily with a 15:45–18:00 break, all copied from listings. Seatings are 12:00 and 14:00 for lunch and 18:00 and 19:00 for dinner; posts say the ground-floor Gang course is closed Monday and Tuesday and the third-floor Byeol course Wednesday and Thursday, though one says there is no regular day off. Five posts give the phone number 0507-1377-0548.
- Things have changed. Posts before June 2026 say chef Park Jae-beom ran the ground floor; a new course was announced from June 15, and posts from July on describe chef Kim Hyun-yu's new Gang course downstairs. The Byeol lunch also changed, from shrimp-potato amuse, squid and a seasonal pasta in an early-2026 visit to pastrami amuse, consommé and pasta alla Nerano from late May. A May 31 post ate the Byeol-style menu on the ground floor, so which floor served which course at that point is unclear.
- Three posts share the same phrasing in the same order — the compact room with roomy spacing, the lettering instructions, the cutlery changes — and look like they came from one template; their menus match reality, so we counted them as visits. Another post describes a porcini pasta no other Gang post mentions, and we gave it less weight.
