Soinsu Seoul is a Korean-beef gopchang (intestine) grill on the ground floor of a red-brick building at 136 Wangsimni-ro, Seongdong-gu. The signature is a mixed platter of small intestine, large intestine and heart with vegetables, priced at 29,000 won a portion in posts from June to August 2026, usually finished with teukyang-bap fried rice at 12,000 won; two people typically order two portions plus the rice. At lunchtime it also serves dishes such as beef-brisket hangover soup. Five posts mention the table mat where staff hand-write which customer number you are (one June post got 189,680). We read 30 posts dated 6 June to 22 September 2026; 12 describe eating at this flagship. What sets it apart
- Staff do the grilling. Four posts say staff put the gopchang on the grill and cooked it for them, and several mention a sauce heart drawn over the chives at the end. One post says that once staff had laid everything out, the diners took over the grilling, so how far the service goes varies a little.
- The gopchang comes out pre-grilled. Four posts say it arrived already mostly cooked, so it only needed a short finish on the table grill.

What we do not know
- Waits vary. Two posts walked straight in (one on a late weekday evening found plenty of free tables), and one found a line outside when leaving. The 'one to two hour wait' line is hearsay. One post wondered whether the low stools out front were for waiting but did not confirm it.
- Portions divide opinion: one post found the large soup heaped with meat, one found the grill platter and fried rice small, and one could not decide whether 60,000 won for two portions was enough.
