Yubok Kalguksu is a hand-cut noodle house five or six minutes on foot from exit 7 at Sadang, on the ground floor at the mouth of the Sadang eating alley. The name comes from the stock: the broth is drawn from wild blowfish, and the shop says it pulls its own noodles daily. Almost everyone orders the same thing — a set where a pot of that soup comes to the table for you to boil yourself while you mix charcoal-fired spicy octopus into a bowl of barley rice. Two side dishes come with it, a fresh-made kimchi and a shredded radish salad, and a self-serve bar in the middle of the room lets you take more. The shop opened in the summer of 2026, and every post we read was written between 31 August and 27 September 2026.

What sets it apart

  1. The side dishes are self-serve. Two arrive at the table — a fresh-cut kimchi and a shredded radish salad — and anything more you fetch yourself from a bar in the middle of the room. Several writers say they refilled the kimchi more than once, and the phrase that keeps recurring is that you can go back without feeling watched. One post notes that the bar also holds plates, tongs and children's spoons, forks and scissors. One writer calls two side dishes meagre, then adds that the bar more than makes up for it.
  2. You order from a tablet at your own table. Several writers mention the screen, and that every dish is shown as a photograph. A tray at the side of each table holds pepper, chilli flakes, soy sauce and raw green chillies, so you season to taste. One writer leaves a warning about those chillies: the octopus is already hot enough, so do not reach for them absent-mindedly if you are not good with spice.
  3. The shop advertises that it makes its kimchi and its noodles every day. Several writers repeat that the owner cuts the kimchi and the radish salad each morning, two of them noting a sign saying the cabbage is Korean-grown, and one a sign about the noodles being pulled in-house. All of that is the shop's own claim, copied down — nobody watched it happen. The one thing a diner worked out for herself is that there is citron in the radish salad, and that its sourness resets the mouth between bites of the hot octopus.
  4. The portions are what people talk about. One writer says the noodle pot arrives less like a bowl than like a washbasin; another split a single set between two and left full; a third ordered two and could not finish. The octopus that comes with the set is smaller by comparison — two writers wondered at first whether it was short — but one of them answers herself: the noodles are the main event and the octopus is there to sharpen the appetite.
  5. The toilets are inside the shop, and there are separate ones for men and women. One writer places them beside the self-serve bar, one photographed them, and one — who says she always checks a restaurant's toilets — found them indoors and clean. One post, however, lists "outdoor toilet" in its fact box, says nothing more about it, and contradicts the three who describe going in. We have followed the three, but the disagreement stands on the record.

Nobody wrote about getting in with a wheelchair. Across all thirty posts the words for wheelchair, pushchair, ramp, threshold, step and step-free never appear once. One writer saw for herself that the shop is at street level — a big sign on the ground floor — and two describe seeing straight in through the plate glass, so it does not appear to be a place you climb stairs to reach. But whether there is a lip at the door, how wide that door is, and whether the toilet can be entered, we do not know. That is silence, not an answer.

What we do not know

  • Everything we read was written inside a single month, and thirty posts landed in it. The shop had just opened; six writers say so. Two posts declare they were sponsored, one says a friend paid, one says she paid herself, and the rest say nothing. Two of the posts share two paragraphs word for word — the one describing the room and the one describing the octopus seasoning. Both writers plainly ate there, so we kept them, but nothing from those shared paragraphs was counted on either side. There is no summer or winter yet. This place is worth reading again once a full year of seasons has gone by.
  • The opening hours do not agree. Most posts give 10:30 to 22:00 every day, with a break from 15:30 to 17:00 and last orders at 21:30. But three say the shop opens at 10:00 and takes no break at all, and one writer reports being told at the shop on 24 September that there was currently neither a break nor a weekly closing day. One post closes the shop at 21:30 rather than 22:00; one starts the break half an hour earlier. The shop had only just opened, and its hours may still have been settling. If you are going late in the afternoon or late in the evening, ring first. The only writers who mention a closing day say there is none.
  • Writers disagree about where this shop came from. One says it is a new opening from a noodle house in Gongju trading since 2011 and counted among the country's five best; another says the original is in Hanam and this is a branch; a third only says she once stumbled into the original and fell for it. We have verified none of it — all three are repeating something they were told or read.
  • How hot it is depends on who you ask. Some writers say even the spice-averse will be fine, or call it mild; one ate less than half her share and handed the rest to her father; another warns you to alternate with the soup. One post says the heat can be adjusted and that she chose the middle setting — but she is the only one who mentions that being possible. What everybody agrees on is that the cool broth takes the edge off.
  • Almost nobody writes about waiting. Not one post records queueing. One writer went on a weekend evening and found it not especially busy; several found the lunch room already full; one says it looks packed every time she walks past at a mealtime. So far nobody has been turned away to wait for a table — a full room and a queue are not the same thing. Two writers booked ahead through Naver, and one of them notes that booking gets your table laid before you arrive.
