Jang & Paste is a Korean-fusion restaurant in a hanok alley in Ikseon-dong, near Jongno 3-ga station. Under exposed rafters with orange sofas and gold lamps, it serves dishes built on Korean fermented sauces with Western technique: pork-jowl capellini at 29,800 won, short-rib risotto at 33,600, clam-and-caper kalguksu at 19,000, mortadella potato pancake at 16,800. - Waits are split. Three posts waited: a weekend lunch with a short queue, an earlier visit abandoned because the queue was too long, and a Sunday lunch party of six seated after 15 minutes. Three walked straight in: around 11:30 on a weekday, once without booking, and once on a rainy day. One got in at once on a weekend but saw a line build behind them.
