Gurye Sutbul Galbi
구례숯불갈비 Pork ribs the kitchen grills over charcoal before they reach your stone plate, plus a whole-kimchi rib stew.
Compiled from 14 blog posts read in fullSources →
Gurye Sutbul Galbi is a pork-rib house in a free-standing building that looks like a house, on a clearing in Bongbuk-ri in the town of Gurye. It sells two things: ribs the kitchen grills once over charcoal before they reach you, and a stew of long-fermented kimchi, put in whole and cooked down with ribs. The ribs are ₩17,000 for a 250g portion with a three-portion minimum; the stew is ₩45,000 for three. At lunch there is a one-person stew at ₩11,000, served until one in the afternoon. Several writers relay that the couple who run it kept a rib restaurant in Seoul for over twenty years before coming home. Open eleven to nine, closed between three and five, and all day every Tuesday. There is a private room at the back, and you take your shoes off to go in. Several writers found the place full at lunch with local residents and council staff.

Counted from what bloggers wrote in their posts; we did not confirm it with the restaurant. Where the values differ, it may be a change over time rather than a disagreement, so we show when each one was written.

What sets it apart
- The meat arrives already cooked, and almost everything about eating here follows from that. Eight writers describe it: grilled once over charcoal in the kitchen, then brought out to a heated stone plate lined with baking paper, with onion and king oyster mushroom, needing only to be finished. What they value about it comes down to three things. Nothing burns — marinated ribs catch easily, one notes, and this removes the risk. Nobody has to cook — one writer is delighted to have "freed my mother from the grill"; another says her family likes not having to do it. And it stays hot — the stone plate holds its heat to the last piece. The cost is waiting. The pre-grilling takes time, so the menu board tells you to order ahead before the meat runs out, and the writer who collected a takeaway rang an hour before the afternoon break.
- There is a private room at the back, and you take your shoes off to enter it. Eight writers mention the room: an open hall from the door through the middle of the building, with the room beyond it, suited to groups. Only one writer mentions the shoes, and that one line matters — you must take them off to go in (July 2025). The same writer notes the hall has chairs, so the hall is chair seating and the room is floor seating. The room can be booked. One writer booked it so that her children, in town for a football tournament, could eat on their own; another post mentions several group bookings in at once. Family meals and work dinners appear in nine of the posts — four parties brought children, two brought parents.
- The couple who run it appear in seven posts, favourably in all seven — the husband and wife both, the wife's warmth, the owner walking a guest out to the door after paying, the owner's blunt good humour. Several writers say the wife makes the side dishes herself, and one records the owner bringing over a freshly dressed plate of perilla leaves partway through the meal, which she calls the best thing on the table. One exchange stands out. A woman collecting a takeaway, embarrassed to be leaving with nothing else, asked whether she could have a little kimchi — and was given as much as she could use. Opening the bags at her lodging, she found glass noodles and dressed aubergine in there too, along with shredded onion and vegetables to grill. She had expected none of it.
- Nobody queues here, but at lunch there are no tables. No writer reports waiting; three report the room being full — one arrived at opening time, took her pick of seats, and watched local residents and council staff fill the hall and the private room by lunchtime (July 2025); one found it full on arrival (March 2025); one found the booking bell going non-stop and the tables already reserved, and waited for opening (November 2025). A fourth watched it fill through her meal; a fifth blames several group bookings for her side dishes arriving late. There is one account of the opposite — quiet and empty at three in the afternoon (March 2026) — but three o'clock falls inside the afternoon break, and she was there to collect a takeaway. Avoid lunch, or ring ahead if you want the room: five writers booked by phone.

- There is almost nothing here for one person — three items carry a minimum. The ribs start at three portions (four writers note it), additions come two at a time, and even the scorched-rice porridge needs two. The plain pork belly is also three. One writer finds the three-portion rule a shame but reads it as a way of keeping the meat fresh; another simply calls it a pity; a third wanted more meat and found the two-portion step awkward. Two things can be eaten alone: the one-person kimchi stew at ₩11,000, served until one in the afternoon, and the rib soup at ₩15,000. Nobody ordered the soup. All we have is one writer glancing at the next table: the broth was red — not the clear kind. If you come alone in the evening it is the rib soup or nothing, and we know nothing about how it tastes.

Parking

There is parking, but not everyone agrees how much. Ten writers mention it. Six call it generous — one notes that finding a space anywhere in Gurye is near impossible and that here you simply park. The two who counted both arrived at five or six cars, and one of them adds that it is a little tight (July 2025); a third writes simply that the lot in front is cramped (March 2026). They are not contradicting each other so much as comparing against different things — roomy for Gurye, six cars if you count. There is a fallback when it is full: two writers say you can leave the car on the lane outside. One records an outdoor table in the car park, where she waited out the afternoon break.

Where it is

Getting inside
Nobody recorded a floor — though the building appears not to have one. Across fifteen posts the words for first floor, second floor and stairs never appear. What is recorded is the look of it: a single white building; a house-style structure on a quiet clearing; a converted family home. It reads as a one-storey house you walk into from the car park, but whether there is a step at the door, nobody looked. One writer notes the back room is floor seating entered without shoes, which implies a raised platform at its entrance — but that is our inference, and we do not print inferences.
We do not know whether you can get in with a wheelchair. In twenty-five posts the words for wheelchair, pushchair, ramp, step and lift never appear once. We have two facts. First, it is a single-storey, house-like building with the car park directly in front. Second, the back room is floor seating entered without shoes. The second is plainly a barrier — but the same writer records that the hall has tables and chairs, so you sit on a chair out front. Whether there is a step at the door, or how wide it is, nobody looked. That is an absence of evidence, not a no.
Nobody looked at the toilet. The word appears in exactly one line across these posts, and that line is the shop's own facilities list copied off Naver: parking, groups, booking, takeaway, separate men's and women's. The writer does not claim to have used it. (She does describe a toilet elsewhere in the same post — at a different restaurant, where she gave up on the queue and used the facilities before coming here.) Whether it is inside or out, whether it is separate, whether it is clean — we can say none of it. That the shop makes the claim on Naver is the whole of what we know. Copying is not seeing.
No one mentioned: Second floor · In a basement · Lift to the floor · Ramp at the door · Step at the entrance · Step-free access · Toilet inside · Accessible toilet · Separate restrooms. That is not the same as there being none — it means we could not confirm it. Worth calling ahead, and do tell us: we will put it here.

Posts that followed a TV spot
Of the 23 posts we gathered, 9 went up on a single day right after a TV spot and show no sign of a visit. They retell the broadcast, so we left them out of the counts.

We do not discard them. That a TV spot produced a burst of posts is itself something worth knowing about a place, and a star rating will not show it.

What we do not know
- We dropped ten of the twenty-five posts. Two are invented — one ends in a block of "Q1: What should a first-timer order?" and both are third-person descriptions in which nobody eats anything. Seven more are one piece of copy shared out. They come from five accounts, each opens by printing its own headline three or four times, and all seven carry the same address with the same parenthetical lot number, the same sentence about the owner's twenty years in Seoul, the same meat "falling apart in strands," the same line about how easily older guests could eat it. Only two of the seven declare being paid — and one of those two is headlined "I paid for this myself." Its first line reads: this post was written for a fee. Dropping only the two honest ones would punish honesty, so we dropped all seven. One further post we excluded entirely: the same blogger's day-three travel diary, which never mentions this restaurant and was pulled in only by the title of the day-two post linked at the bottom. The figures on this page are therefore out of fifteen, not twenty-five — and fifteen posts here are fifteen people.
- Whether three portions feed three people is disputed — five say no, three say yes. Against: 250g before grilling left them short; the quantity was a surprise; it looked like two portions, not three; a family of four gets through six or seven; a party reckoned they would need six to eight to eat properly. For: one writer was full; another pair were too full to reach the stew they had come for. Look at the numbers and both sides are describing the same plate. A portion is 250g raw and about 180g once pre-grilled — two writers each recorded one of those figures — so three portions is somewhere near 540g on the table. That is too much for two and not enough for four. One family went back the next day and ordered four portions from the start, which they say was right. With three or more of you, order one portion more than there are people.
- Nobody wrote about getting here without a car. Across fifteen posts the words for bus, station and minutes on foot never appear once. Ten writers describe the car park; those who explain the route say they put the address in the navigation. One person did arrive without a car — she describes herself as "on foot and hungry after hiking Nogodan" — but does not say how she got from the mountain. The paid copy we dropped offers "five minutes by car" and "two minutes by car," which is still a car. All we can say is where it stands: a free-standing, house-like building on a clearing in Bongbuk-ri, with a protected local monument, the Son In-pil memorial stele, right next door — one writer walked over to see it during the afternoon break. How far it is from the station or the bus terminal, nobody says.
- Prices went up, and we have the steps. A portion of ribs: ₩16,000 (July and November 2025, March 2026) → ₩17,000 (from February 2026). The medium stew: ₩40,000 (March 2026) → ₩45,000 (from that May). The dessert noodles: ₩5,000 (July 2025) → ₩6,000 (June 2026). The summer noodle-and-bulgogi dish: ₩14,000 → ₩15,000. Because ₩16,000 and ₩17,000 both appear in the spring of 2026, we cannot say which month the rise landed in. And only seven of the fifteen posts record any price at all — two copied the whole board, and nobody recorded what the large stew, the extra ribs, the porridge or the rice cost.
