Daejeon Dajeong Sikdang is a hand-cut noodle shop in a lane opposite the St Paul girls' schools in Chuiam-dong, Nonsan. The name says Daejeon; the shop is in Nonsan — eight of the writers get that out of the way first. Locals shorten it to Dajeong Kalguksu. It opened in 1999, and the menu is two dishes: kalguksu, and a cold soy-milk noodle bowl sold only in summer, with a large size and a bowl of rice beside them. The side dishes are fresh kimchi and a dish of chilli paste; that is all. Twenty-one posts describe the owner at the entrance, rolling the dough with a pin and cutting the noodles by hand — it is what you watch while you wait. The old house it occupies has both tables and a shoes-off room with floor seating. Closed Sundays, and from two until five. The posts we read run from October 2024 to September 2026.

What sets it apart

  1. Twenty-one posts of twenty-five describe the noodles being made. Just inside the door the owner rolls the dough, cuts it and drops it into the pot, and the writers keep coming back to it: you watch it every visit; the wait goes quickly; he was still rolling when we left. Four of them note how rare it has become. One worries, plainly, about his back, his shoulders and his wrists. One says the dough rests a day; another that it is mixed early and left to prove.
  2. Fifteen posts record a wait, weekdays included. Four parties ahead even off the lunch peak; no seats inside at opening time; five parties ahead; fifteen minutes outside; twenty minutes outside and twenty-five more once in. There is one way to wait: write your name and your number in the notebook by the door — five posts explain it, and there is no buzzer system. Against that, two walked in at eleven on a weekday and half past eleven on a Saturday, and one found the small room free at twenty to twelve on a Friday. Three posts put the turn at noon. Two add that the tables empty quickly, so a queue moves.
  3. A thousand won in two years. The hot bowl is ₩8,000 in posts from October and December 2024 and March 2025, and ₩9,000 in seven posts from 2026; the summer bowl went from ₩9,000 to ₩10,000. The large size and the rice stayed at ₩1,000 each. Nobody calls it dear — four write some version of good value, and a 2024 post works out that a bowl with rice still came to ₩9,000. One writer alone pushes back: prices everywhere have risen, and she had been going to a cheaper noodle shop instead. The portions are said once to have shrunk, but that is the writer's cousin in Nonsan talking, not the writer.

There is no car park — thirteen posts say so. One writer's summary: a narrow lane, no parking, and you will need luck and nerve. Four add that the lane in front is always full, so you will not leave it there. One post says you may park in front, and even that one calls the lane awkward. Three alternatives are on record: a public car park three minutes' walk away (two posts), the paid car park at the Nonsan five-way junction (two posts, one of whom was told it is free), and the district office car park (one). Two writers park well away and walk.

No post gives a floor. Two describe a converted single-storey house; none mentions stairs or a lift. Two note that the inner room is a step up, with your shoes off — and that step is the only level change anyone writes about.

No post says whether you can get in with a wheelchair or a pram — no threshold, no ramp, no door width. Two things can be read out of the posts, though: it is a converted house, and the inner room is shoes-off floor seating (twelve posts), and one writer notes that older customers who cannot manage the floor wait for a table instead. Five posts remark how many older customers there are — one waiting outside on a stick, another's grandmother past ninety. Still, nobody has written about getting in on wheels.

What we do not know

  • Not one writer describes arriving by bus or on foot. Every direction on record is for a driver: the lane opposite the girls' schools (three), the five-way junction (two), a first meal straight off the train at Nonsan station (one), thirty-five minutes from Gyeryong or eight from the strawberry farm (one), and the bus terminal — in a title, once. Nobody says how far it is to walk from the terminal or the station, or which bus stops nearby. That is not a claim that transit is poor; it is what we do not know.
  • One post says there is no high chair — a plain line in its information block, April 2026 — and none says there is one. Three writers came with children (a ten- and an eight-year-old; two described as a handful; a tableful of them), none of them mentions a chair, and instead two note that nothing is heavily seasoned, so the children eat a whole bowl each. One ladles it into a side dish to cool. One was glad of the small room, to sit apart with the children.
  • Go in the evening and the noodles may be gone. Three posts record an early close when the day's dough runs out, and one writer, having been turned away more than once, now eats there whenever she can and advises ringing first. There is no booking — one post states it flatly. Hardly anyone has been for dinner: a single line in twenty-five posts mentions evening queues, and one regular admits that after countless visits she has never once gone in the evening. One post alone gives Saturday as eleven to two, with no dinner service at all; a single account cannot go on the page, but if you are planning a Saturday evening, ring 041-736-9110 first.
  • No post declares a sponsorship. Five say they paid their own way and twenty do not say — and silence is not the same as paying. One posted the receipt; one states at the foot of every post that any advertising would be declared. On drink the posts contradict each other: a September 2026 writer says soju is sold although it is not on the menu, while an October 2025 writer says plainly that no alcohol is served. We have not been able to settle which is current.
